Meat lovers meatball sub

ingredients
For the meatball sub
- 600 g ground sirloin steak
- 1 large egg, beaten
- 1 cup Italian breadcrumbs
- 1 medium onion, finely chopped
- 4 cloves garlic, pressed and finely chopped
- 1/2 teaspoon crushed red pepper flakes
- 2 teaspoons Worcestershire sauce,
- 1/4 cup flat-leaf parsley leaves, chopped
- 1/4 cup grated Parmigiano or Romano
- Coarse salt and black pepper
For the marinara sauce
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, crushed and chopped
- 1/2 teaspoon crushed red pepper flakes
- A handful of flat-leaf parsley leaves, chopped, about 2 tablespoons
- 1/2 teaspoon dried oregano
- 1 can of peeled tomatoes
- 1 can coarse-style crushed tomatoes
- Salt and freshly ground black pepper
- 4 semolina crispy subrolls, with or without sesame seeds
- 2 1/2 cups shredded Provolone or Italian 4-cheese mix
- Grated basil (sweet) or shredded arugula (spicy) leaves, for garnish

Method
- Preheat the oven to 232°C.
- Place the ground sirloin steak in a large mixing bowl and make a well in the center of the meat. Fill well with egg, breadcrumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese and a little salt and pepper. Mix the meatball ingredients together until well combined, but not over-blended. Divide the mix into 4 equal parts, roll each part into 4 balls and spread them evenly on a non-stick baking sheet. Place the meatballs in the oven and roast for about 12 minutes. Break open a meatball and make sure the meat is cooked before removing it from the oven.
- Heat a medium saucepan over medium heat. Add oil and garlic. When the garlic starts to sizzle, add spices and ground pepper. Let the oil infuse for half a minute, then stir in the tomatoes and season the sauce with salt and pepper. Bring the sauce to a bubble, reduce the heat and simmer until the meatballs are removed from the oven.
- Combine meatballs and sauce and stack into sub buns, 4 meatballs per sub. Top with shredded cheese and place under subs under broiler to melt cheese. Sprinkle with shredded basil or arugula and serve with a stack of oven chips.
